The Savi Sparkling wine is a blend of fruit from, Cape Town, Elgin and Stellenbosch. Each region adds to the flavours profile of the final blend. The Cape Town region adds a lime refreshing element, Elgin region for the minerality and Stellenbosch for the rich pure fruit profile. Each region comes with its own climatic conditions and own vineyard practices. The Cape Town region, because of the proximity to the Atlantic Ocean needs more of an open canopy to allow more indirect sunlight. Elgin requires good ventilation to promote the drying of the fruit after rain and to prevent diseases and Stellenbosch requires the right fruit coverage to prevent sunburn.
